Chicken Pasta Salad- DELICIOUS!


My husband and I have both gained a significant amount of pudge (as I like to call it!) over the Festive Season so we decided to start eating in for a change. Enough with the heavy dinners, glasses of wine, pastries and party food, dessert and sheesha overload! I made this delicious chicken pasta salad which was soooo filling, very healthy and very easy to make. Check out the recipe below:

This dish takes about 45 minutes of prep and cooking time and very comfortably feeds 2 or 3 people. 

STEP 1: Gather as many fresh veggies as you can find, the more colourful the better. Chop them and place them into a bowl. I used half a yellow pepper, half an orange pepper, half a red pepper, cherry tomatoes, 3 gherkin pickles from a jar, pre-chopped black olives, green olives, a full cucumber, 4 artichoke hearts and one palmetto stick from a can


STEP 2: To save time, buy a pack of pre-cut lettuce from the supermarket. I used the mix with many different colours and textures. Just make sure you re-wash the lettuce! Add it to the bowl.

STEP 3: Boil 1 cup of Fusilli or bow-tie pasta in water with salt for 10-15 minutes depending on how you like it. Drain it well and add it to the bowl 


STEP 4: Purchase fresh pre-cut chicken breasts from the supermarket or slice it into large cubes. Marinate the chicken in ketchup, salt, pepper, and BBQ seasoning. Spray a few drops of PAM spray on a grilling pan and grill the chicken for about 5 minutes on each side. Constantly flip them over so they cook evenly and don't stick to the pan. I prefer a grilling pan to a George Forman Grill because the chicken turns out more tender and juicy

STEP 5: While the chicken is grilling, make any dressing. I like to make this one:
-  1 Tablespoons of balsamic Vinegar
-  2 Tablespoons of extra virgin olive oil
-  1 teaspoon of Dijon mustard
-  1/2 teaspoon of greek yoghurt (to neutralize the acidity of the vinegar)
-  a few drops of drinking water (to loosen it up)
-  sprinkle of salt and pepper
Mix them all together and add it to the salad and toss well.


STEP 6: When the chicken is cooked through, add it to the salad and serve immediately. I don't like to toss it with the salad so it doesn't get too soggy

STEP 7: Serve with boiled corn and voila, a healthy and delicious meal! :)
